Tomato and Avocado Salad

 Ingredients:
2 ripe avocados 
2 large tomatoes
Watercress or mixed leaves
Lemon 
Olive oil
Sea salt
Pepper

Method:
Peel and de-stone the avocado
Cut into slices
Chop tomatoes into bite size chunks or slices
Arrange watercress or mixed leaves on a plate
Add tomatoes and arrange the avocado over the top
Drizzle tablespoon of olive oil and a good squeeze of lemon over the salad
Season with a pinch of sea salt and a grind of black pepper
​Serves 2
