Chickpea Tomato Salad |
Ingredients:
1 can of chickpeas Flat leaf parsley Green onions Sea salt Black pepper 2 large tomatoes Tbsp Balsamic vinegar Tbsp Olive oil Method: Rinse and drain the chickpeas Chop tomatoes into chunks Chop onions Mix together in a serving bowl and add oil and vinegar, season with salt and pepper. Rip flat leaf parsley into pieces and scatter over the top.
