Chickpea Tomato Salad

Ingredients:
1 can of chickpeas
Flat leaf parsley
Green onions
Sea salt
Black pepper
2 large tomatoes
Tbsp Balsamic vinegar
​Tbsp Olive oil

Method:
Rinse and drain the chickpeas
Chop tomatoes into chunks
Chop onions
Mix together in a serving bowl and add oil and vinegar, season with salt and pepper. Rip flat leaf parsley into pieces and scatter over the top.
Serves 2

Tomato - rich in Lycopene, low fat and provide good levels of antioxidants 
Chickpeas - great source of dietary fibre and plant proteins
Flat leaf parsley - intense flavour and provides loads of vitamins and minerals
