Sweet potato prune bread
Ingredients
1 1/2 cups sifter self raising flour 1 tsp ground nutmeg 1 tsp ground cinnamon 1 cup of sugar 2 eggs lightly beaten 1/2 cup of vegetable oil or coconut) 2 tablespoons milk or soya milk) 1 cup cooked mashed sweet potato Optional 1 cup of walnuts nuts or raisins I used chopped prunes Directions Preheat oven to 170 degrees Grease bottom of approx 8 x 4 loaf pan Mix together the flour and spices in large mixing bowl With a large spoon stir in sugar, eggs oil and milk and mix well Mix in mashed sweet potatoes and nuts or prunes It's quite a dense mixture Pour into the pan Bake for 1 hour and 10 minutes Insert a skewer to check it comes out clean Remove from pan and cool on a wire rack |
