Tomato Cucumber Salad |
Ingredients;
2 large ripe tomatoes 1 cucumber 1 red onion Fresh flat leaf parsley Fresh lemon Olive oil Sea salt Black pepper Method: Chop tomatoes into bite sized chunks Slice cucumber Chop red onion Mix together in a large bowl Squeeze a lemon and drizzle a table spoon of olive oil over the mix and season with salt and pepper Rip flat leaf parsley into small pices and scatter over the salad Serves 2 Nutritional benefits:
