Tomato Soup ( and grilled cheese )
Growing up in Canada I always remember coming home for lunch to hot tomato soup and grilled cheese sandwiches. We needed that hot nourishing fodder to battle the harsh icy cold winters. The crisp yet gooey grilled cheese was scrummy to dip into the piping hot soup- the perfect combination.

Serves 2
Ingredients: 1 onion finely chopped 1 tablespoon olive oil 1 clove garlic 1 tin chopped tomatoes 1 tablespoon tomato puree 1 tin of whole milk (use tomato tin) Pinch sea salt Ground pepper to taste Method: In a saucepan Sautee the onions and garlic in olive oil until soft and lightly brown Add the chopped tomatoes, puree and milk and cook over medium heat for 5 minutes Ass salt and pepper Blitz in food processor or use hand held mixer until smooth Serve hot Grilled cheese Two pieces of good bread buttered Slice of your favourite cheese Place bread into med hot frying pan buttered side down Place cheese on bread Place other slice of bread on top again buttered side out Cook until brown Flip and repeat Serve warm Dip to your hearts' content............ |
