Veggie Burrito/Taco

Veggie Burrito/Taco


Serves 4
Ingredients;
Wholemeal wraps
1 pack frozen veggie/soya mince
1 teaspoon spice mix like Mexican, American BBQ, Chilli....
1 large onion finely chopped
1 clove of garlic grated
Low cal olive spray 
Tin of drained black beans
2 tablespoons tomato puree
Shredded lettuce
Chopped tomatoes
Chopped cucumber
Optional condiments
Grated cheese 
Hummus
Creme Fraiche 
Chilli hot sauce
Tortilla chips to crunch
Method:
To make the wraps into bowls
Slightly wet the wrap and mould over a mug to form a bowl 
Place into a preheated oven 180 degrees for approx 10 minutes to crisp up and hold shape - remove from oven and carefully remove the the mug as it will be hot.
Burrito taco mix
In a large frypan spray with frylight and gently sautee the onions and garlic. Add the frozen veggie mince and spice mix then cook until brown. Add the puree and mix through. Add the black beans and mix thoroughly till it's all piping hot.  
Assemble as you like
I layer the burrito mix first then a little grated cheese, then salad fixins and finally some hummus and creme fraiche.
 Note: If you don't want to make the taco bowls, then simply place the mix and salad in the wrap for a burrito
