Eggs
Eggs can be a great addition to a diet as they are versatile and packed full of nutrients. Eggs are a good source of protein and provide Vitamin D, Vitamin A, Vitamin B2, Vitamin B12, Folate and Iodine. Eggs make wonderful fluffy omelettes which you can stuff with all sorts of wonderful ingredients like mushrooms, spinach, peppers, onions, cheese, beans, ham, tomatoes and the list goes on....Poached eggs on toast with a side of baked beans is firm favourite in my house always on a slice of healthy hearty toast. Scramble, hard boil, soft boil for dippy eggs, bake or fry eggs for a super quick breakfast, lunch or light supper.

Scrambled Eggs
Take two eggs, crack into a bowl and beat quickly with a fork
Season with salt and pepper Squirt of Frylight or splash of olive oil into pan and heat to medium temperature Tip egg mixture in - let it sit for a minute then gently move it around until broken up into good sized pieces and cooked Add a few slices of fresh tomato to the plate for a little extra fibre and vit C Serve with a slice of seeded toast |
Omelette
Take two eggs, crack and beat in a small bowl
Season with salt and pepper Frylight into frying pan and heat to medium Pour in mixture and let it set Spatula the omelette and flip it Add fillings of choice to half and fold the top over Let it brown and serve Omelettes are super easy to make and can take so many different fillings Excellent way to use up leftover ingredients like chilli, spag bol, stroganoff, mushrooms, peppers, courgette ( zuchinni ) cheese, ham , smoked salmon etc...great for breakfast but also lunches and suppers-just add a side salad to bulk it out a bit. An old family favourite back home in Canada - The Toasted Western omelette with finely diced sauteed onions, ham, peppers and cheese between two pieces of toast with a splodge of mayo and ketchup. Devilled Eggs
Ingredients:
Dozen eggs 4 tablespoons light mayo 1/2 teaspoon mustard 2 dill pickles dried and finely chopped Sea salt & pepper to season Paprika for sprinkle Method Hard boil the eggs, cool, peel them cut in half Scoop out the yolk and place in a bowl -add the ingredients bar the paprika -mix together well Fill the eggs with the mixture and sprinkle with paprika Chill in fridge until ready to serve |
