Chickpea Tomato SaladIngredients:
1 can of chickpeas Flat leaf parsley Green onions Sea salt Black pepper 2 large tomatoes Tbsp Balsamic vinegar Tbsp Olive oil Method: Rinse and drain the chickpeas Chop tomatoes into chunks Chop onions Mix together in a serving bowl and add oil and vinegar, season with salt and pepper. Rip flat leaf parsley into pieces and scatter over the top. Serves 2 |

Tabbouleh Ingredients:
50g bulgur wheat or quinoa grains 50g flat leaf parsley chopped 50g mint chopped 200g ripe tomatoes de-seeded and chopped 2 spring onions finely chopped 3 tablespoons olive oil Juice of one lemon Rinse the bulgur wheat in a sieve until the water runs clear. Drain well, then transfer to a large bowl. Pour over 200ml boiling water, cover with cling film and leave to soak for 30 mins. Roughly chop the mint and the parsley in a bunch, stalks and all.. Place in a large bowl and add the tomato and spring onion. Thoroughly drain the bulgur wheat or quinoa and add to herb mix, along with lemon juice and olive oil. Mix thoroughly, Season with salt and pepper. Serve on it's own or stuff into a pitta bread with some chilli olives . |

2 ripe avocados 2 large tomatoes Watercress or mixed leaves Lemon Olive oil Sea salt Pepper Method: Peel and de-stone the avocado Cut into slices Chop tomatoes into bite size chunks or slices Arrange watercress or mixed leaves on a plate Add tomatoes and arrange the avocado over the top Drizzle tablespoon of olive oil and a good squeeze of lemon over the salad Season with a pinch of sea salt and a grind of black pepper Serves 2 |

Dozen eggs 4 tablespoons light mayo 1/2 teaspoon mustard 2 dill pickles dried and finely chopped Sea salt & pepper to season Paprika for sprinkle Method Hard boil the eggs, cool, peel them cut in half Scoop out the yolk and place in a bowl -add the ingredients bar the paprika -mix together well Fill the eggs with the mixture and sprinkle with paprika Chill in fridge until ready to serve |

So simple but delightfully healthy and very tasty The base is baby spinach leaves - washed and pat dried Leftover turkey or chicken cut into strips Pomegranate seeds sprinkled over the lot Dressing 3 tablespoons extra virgin olive oil 1 tablespoons balsamic vinegar If you like it a little sweeter add 1 tablespoon honey Mix it together well and pour over salad when ready to serve This a great festive looking salad and works well amongst the cheese boards and meat platters |
PomegranateJust because these little pearls of tartness are so vibrant and crunchy I think they should always have a special place on a festive table. They are just gorgeous along side deli meats and cheese boards and add a pop of flavour just when you need it. Pomegranates are good for you! They provide a great source of fibre, vitamin C and are regarded by some as a symbol of prosperity and ambition. Let's eat up then x

Coleslaw CrunchAlways a favourite to add some crunch and texture to a plate
Ingredients: 2/3 carrots finely sliced 1/2 red cabbage finely sliced 1/2 white cabbage finely sliced 1 onion finely chopped 4 tablespoons light mayo Juice of one lemon 1 teaspoon sugar Sea salt and pepper to taste Mix the mayo, lemon juice and sugar together - should be slightly runny - pour over slaw and mix evenly. Season with salt and pepper to taste. |
